Beaufort, is situated between the Canal du Midi in the plain and the Cathar site of Minerve in the hills and is conveniently placed on the D910, about 3 km out of Olonzac in the direction of Minerve. Click here for a plan to help you locate the village.
The 'Auberge de St. Martin' is situated in the building of the former school of Beaufort village. The playground has been transformed into a magnificent terrace under the shade of trees almost a hundred years' old.
After having practised his craft throughout Europe, the USA and the Caribbean, Christophe, the 'Chef de Cuisine', has returned to his roots. Assisted by his wife, Mylène, for the service, this southern spirit proposes for you a simplicity of style but high quality cooking that draws its advantages from the variety of each season. In his menus, the fine herbs which are so characteristic of the South of France combine to delight the palate throughout the year.

Summer Menu
- Cold eggplant mousse with purée of fresh tomatos and chives
